How many of you open and fridge and stand there looking at all the left overs and thinking what to make of it, I think most of us.
There is abundant recipes out on Internet on leftover, we are always in look out for ones that matches are leftovers. Today I will be sharing one such recipe called plantain and potato patties. When if you don’t have any leftovers you can still make this.
This is actually my mother in – laws recipe. We had boiled potato and plantain lying in the fridge, so we decided to make the best of the both.
Let’s begin by steaming one pealed plantain. Steam this in a pressure cooker for 5 – 10 minutes or until the plantain is soft.
Next let the plantain cool and then mash it well, ensure the are no lumps. Add the mashed plantain along with 2 small sized boiled potato ( left over) to mixing bowl and mix it together. Since the Potatoes were already seasoned, I cut down my seasoning to half. If your making fresh, double the quantity mentioned below.
Chilly powder – 1 table spoon
Turmeric powder – 1/2 tea spoon
Garam masala – 1 tea spoon
Chat masala – 1 tea spoon
Salt as per your taste
Add the above mentioned seasoning to the mixing bowl along with a table spoon of corn flour and coriander leaves. Mix all this together, add a table spoon of oil to this mixture to help it binding. Taste it and adjust the seasoning.
Quick tip: always remember if your dish tastes good uncooked then it’s is bound to taste good when cooked. Hence it’s very important to taste and adjust your seasoning before starting the cooking process.
Make small patties of the mixture and shallow try it in a pan on both sides, until it try’s brown and roasted.
Here you go simple and quick leftovers patties are ready to be served. Tastes better with sauce of any kind. In my next blog I will be sharing recipes to two different types of dips, so stay tuned.
